Honey Lemon Chicken Meatballs

Ingredients
  

  • 1 lb ground chicken
  • 1 egg
  • ½ cup breadcrumbs
  • 2 tbsp honey
  • Juice of 1 lemon
  • 2 cloves garlic minced
  • 1 tsp soy sauce optional
  • Salt & pepper to taste

Instructions
 

  • Mix chicken, egg, breadcrumbs, and seasoning.
  • Form into balls and chill for 20 mins.
  • Bake at 375°F for 18–20 mins or pan-fry until golden.
  • In a saucepan, mix honey, lemon juice, and garlic. Simmer until thick.
  • Toss meatballs in glaze before serving.

Storage + Reheating

  • Store in an airtight container in the fridge for up to 4 days.
  • For longer storage, freeze for up to 3 months.
  • Reheat gently in the oven at 325°F or in a covered pan with a splash of water to prevent drying out.
